Spiced Malaysian mutton soup

Sup kambing is a hearty mutton soup served at mamak stalls in Malaysia and Singapore.

Mutton is simmered long with many spices and topped with fried shallots and coriander.

  • Mutton on the bone800 g
  • Onions & gingersome of each
  • Curry powder & star anisesome of each
  • Cinnamon & cardamomsome of each
  • Tomatoes2
  • Fried shallots & corianderto garnish

Preparation

  1. Start the mutton with water and spices.

  2. Add onions, ginger and tomatoes.

  3. Simmer gently for about an hour.

  4. Keep cooking until the meat is tender.

  5. Serve with fried shallots and coriander.
