Singapore's bright red bone soup

Sup tulang merah is a Singaporean Indian-Muslim specialty of mutton bones in a bright red, spicy sauce.

The marrow is sucked from the bones with bread - a sociable mamak dish with tomato and chili.

Ingredients

  • Mutton marrow bones1.2 kg
  • Tomato paste3 tbsp
  • Chili powder2 tbsp
  • Onion & gingersome of each
  • Curry powder & cinnamonsome of each
  • White breadto serve

Preparation

  1. Simmer the mutton bones long into a rich broth.

  2. Fry onion, ginger and spices.

  3. Add tomato paste and chili to the sauce.

  4. Braise the bones in the red sauce until thick.

  5. Serve with white bread for dipping.
