Ruby water chestnuts in coconut milk

Tab tim krob is a Thai dessert of crunchy water chestnuts dyed red and coated in tapioca flour.

Served in sweetened coconut milk with ice, the glistening pieces resemble sparkling rubies.

Ingredients

  • Water chestnuts200 g
  • Tapioca flour100 g
  • Coconut milk300 ml
  • Red food syrup2 tbsp
  • Sugar60 g
  • Crushed iceto taste

Preparation

  1. Dice the water chestnuts and dye them red.

  2. Toss in tapioca flour until coated.

  3. Cook in boiling water until they float.

  4. Shock in ice water.

  5. Serve with sweetened coconut milk and ice.
