Tahu Gejrot

Fried tofu in sweet-sour chili sauce

Tahu gejrot is a street snack from Cirebon in West Java, where fried tofu floats in a thin, sweet-sour sauce.

Garlic, shallots and chili are crushed in a clay dish and doused with palm sugar-vinegar water.

Ingredients

  • Fried tofu300 g
  • Palm sugar3 tbsp
  • Vinegar & soy saucesome of each
  • Garlic & shallotssome of each
  • Bird's eye chili4 pieces
  • Water150 ml

Preparation

  1. Dissolve palm sugar in water, mix with vinegar and soy.

  2. Coarsely crush garlic, shallots and chili.

  3. Stir the spice paste into the sugar solution.

  4. Cut the fried tofu into bite-size pieces.

  5. Douse the tofu with the sauce and serve at once.
