Tahu Telur

Tofu omelette with sweet peanut sauce from Surabaya

Tahu telur is a specialty from Surabaya in which tofu cubes are baked into egg.

Doused with a sweet petis peanut sauce and sprouts, it makes a savoury dish.

Ingredients

  • Firm tofu300 g
  • Eggs4
  • Peanuts100 g
  • Shrimp paste (petis)1 tbsp
  • Bean sprouts & lettucesome of each
  • Palm sugar & garlicsome of each

Preparation

  1. Cube the tofu and mix with beaten egg.

  2. Cook into a thick omelette in the pan.

  3. Grind peanuts with petis, palm sugar and garlic into a sauce.

  4. Cut the omelette into pieces.

  5. Serve with sauce, sprouts and lettuce.
