Japanese sesame ramen with minced pork
Tantanmen is the Japanese adaptation of Chinese dan dan noodles, fitted to the ramen tradition.
Instead of dry, the noodles are served in a creamy, lightly spicy sesame broth crowned with seasoned minced pork.

Ingredients
- Ramen noodles250 g
- Ground pork200 g
- Sesame paste3 tbsp
- Chili oil & doubanjiang1 tbsp each
- Chicken broth & soy milksome of each
- Spring onion & bok choysome of each

Preparation
Fry the pork hard with doubanjiang.
Whisk sesame paste with broth and soy milk into a soup.
Stir in chili oil and heat.
Cook the noodles and add to the broth.
Top with pork, bok choy and spring onion.
