Japanese sesame ramen with minced pork

Tantanmen is the Japanese adaptation of Chinese dan dan noodles, fitted to the ramen tradition.

Instead of dry, the noodles are served in a creamy, lightly spicy sesame broth crowned with seasoned minced pork.

Ingredients

  • Ramen noodles250 g
  • Ground pork200 g
  • Sesame paste3 tbsp
  • Chili oil & doubanjiang1 tbsp each
  • Chicken broth & soy milksome of each
  • Spring onion & bok choysome of each

Preparation

  1. Fry the pork hard with doubanjiang.

  2. Whisk sesame paste with broth and soy milk into a soup.

  3. Stir in chili oil and heat.

  4. Cook the noodles and add to the broth.

  5. Top with pork, bok choy and spring onion.
