Tanuki Soba

Buckwheat noodles in dashi with crispy tempura bits

Tanuki soba is a Japanese buckwheat noodle soup topped with crispy tempura batter bits (tenkasu).

The bits soak up the warm dashi broth and give the soup a rich bite.

Ingredients

  • Soba noodles200 g
  • Dashi broth800 ml
  • Tenkasu (tempura bits)4 tbsp
  • Soy sauce & mirin2 tbsp each
  • Spring onion2
  • Norisome

Preparation

  1. Cook the soba noodles and rinse.

  2. Season the dashi with soy sauce and mirin.

  3. Divide the noodles into bowls.

  4. Pour over hot broth.

  5. Top with tenkasu, spring onion and nori.
