Sweet mung beans in coconut milk

Tao suan is a Thai dessert of split mung beans in a lightly thickened sweet soup.

Served with coconut milk and crispy dough sticks (patongko), it is a warm comfort dessert.

Ingredients

  • Split mung beans200 g
  • Pandan leaf2
  • Sugar100 g
  • Tapioca starch2 tbsp
  • Coconut milk200 ml
  • Crispy dough sticksto serve

Preparation

  1. Steam the mung beans until soft but whole.

  2. Boil water with pandan and sugar.

  3. Thicken lightly with tapioca starch.

  4. Stir in the mung beans.

  5. Serve with coconut milk and dough sticks.
