Filipino breakfast with cured beef

Tapsilog is the iconic Filipino breakfast - a portmanteau of tapa (marinated beef), sinangag (garlic rice) and itlog (egg).

The sweet-salty cured beef is fried and served with a fried egg and garlic rice; a splash of vinegar rounds it off.

Ingredients

  • Beef (thin, tapa)300 g
  • Soy sauce & vinegar2 tbsp each
  • Garlic4 cloves
  • Cooked rice (cold)400 g
  • Eggs2 pieces
  • Sugar1 tbsp

Preparation

  1. Marinate the beef in soy sauce, vinegar, garlic and sugar.

  2. Fry rice with garlic into sinangag.

  3. Sear the marinated beef briefly.

  4. Fry the eggs sunny side up.

  5. Plate tapa, garlic rice and egg together.
