Silky tofu pudding with sugar syrup

Tau huay is a silky-soft soybean pudding served as a popular dessert in Singapore.

Freshly made soy milk is set with gypsum or agar and doused in clear sugar syrup.

Ingredients

  • Soybeans200 g
  • Water1.5 l
  • Setting agent (gypsum or agar)some
  • Sugar120 g
  • Pandan leaf1

Preparation

  1. Soak the soybeans and grind into soy milk.

  2. Boil the soy milk and strain.

  3. Stir in the setting agent and let set.

  4. Cook sugar syrup with pandan.

  5. Douse the tofu pudding in syrup and serve.
