Myanmar's fermented tea-leaf salad

Myanmar is one of the few countries where tea is not only drunk but eaten. Lahpet thoke combines fermented tea leaves with crunchy beans, nuts and sesame into a unique salad.

It is hospitality on a plate: lahpet once even sealed peace treaties between kingdoms. Bitter, sour, crunchy and savoury – a taste experience like no other.

Ingredients

  • Fermented tea leaves (lahpet)3 tbsp
  • Crunchy yellow beans3 tbsp
  • Roasted peanuts3 tbsp
  • Toasted sesame1 tbsp
  • Tomato & white cabbage1 handful each
  • Garlic oil & lime1 tbsp each
  • Fish sauce (or soy, vegan)1 tbsp

Preparation

  1. Rinse and drain the tea leaves briefly if needed.

  2. Finely shred the cabbage, dice the tomato.

  3. Arrange all ingredients loosely in a bowl.

  4. Drizzle with garlic oil, lime juice and soy sauce.

  5. Toss vigorously only at the table so everything stays crunchy.
