Myanmar's fermented tea-leaf salad
Myanmar is one of the few countries where tea is not only drunk but eaten. Lahpet thoke combines fermented tea leaves with crunchy beans, nuts and sesame into a unique salad.
It is hospitality on a plate: lahpet once even sealed peace treaties between kingdoms. Bitter, sour, crunchy and savoury – a taste experience like no other.

Ingredients
- Fermented tea leaves (lahpet)3 tbsp
- Crunchy yellow beans3 tbsp
- Roasted peanuts3 tbsp
- Toasted sesame1 tbsp
- Tomato & white cabbage1 handful each
- Garlic oil & lime1 tbsp each
- Fish sauce (or soy, vegan)1 tbsp

Preparation
Rinse and drain the tea leaves briefly if needed.
Finely shred the cabbage, dice the tomato.
Arrange all ingredients loosely in a bowl.
Drizzle with garlic oil, lime juice and soy sauce.
Toss vigorously only at the table so everything stays crunchy.
