Fried eggs in red chili sauce
Telur balado are hard-boiled, fried eggs in a bright red sambal balado sauce.
The balado preparation from Sumatra blends chili, shallots and tomato into a bold seasoning.

Preparation
Lightly fry the boiled eggs and set aside.
Grind chili, shallots and garlic into a paste.
Fry the paste in oil.
Add tomato and lime juice.
Toss the eggs in the sauce and serve.
