Fried eggs in red chili sauce

Telur balado are hard-boiled, fried eggs in a bright red sambal balado sauce.

The balado preparation from Sumatra blends chili, shallots and tomato into a bold seasoning.

  • Hard-boiled eggs6
  • Red chilies8
  • Shallots & garlicsome of each
  • Tomato1
  • Lime juice & saltsome of each
  • Oil3 tbsp

Preparation

  1. Lightly fry the boiled eggs and set aside.

  2. Grind chili, shallots and garlic into a paste.

  3. Fry the paste in oil.

  4. Add tomato and lime juice.

  5. Toss the eggs in the sauce and serve.
