Thai Iced Tea

Cha yen – Thailand's bright-orange iced tea

Cha yen owes its unmistakable orange to strongly brewed, spiced black tea. Served over ice and finished with condensed and evaporated milk, it is the sweet refreshment at every Thai street stall.

The layering makes it beautiful: first the dark tea, then the white cloud of milk slowly drifting down.

Ingredients

  • Thai tea mix4 tbsp
  • Sugar3 tbsp
  • Condensed milk4 tbsp
  • Evaporated milk / cream2 tbsp
  • Ice cubesplenty

Preparation

  1. Steep the Thai tea in hot water for 5 min, strain.

  2. Dissolve the sugar in the warm tea, cool completely.

  3. Fill glasses with ice, pour in the tea up to two thirds.

  4. Carefully layer condensed and evaporated milk on top, stir before drinking.
