Spiced milk drink for the Holi festival

Thandai is a chilled Indian milk drink with nuts and spices, especially enjoyed at the Holi festival.

Almonds, fennel and saffron give the drink its festive, aromatic character.

Ingredients

  • Milk1 l
  • Almonds & cashews100 g
  • Fennel & melon seeds1 tbsp each
  • Cardamom & saffronsome of each
  • Sugar100 g
  • Black peppercornsa few

Preparation

  1. Soak the nuts and seeds and grind fine.

  2. Warm the milk with sugar and saffron.

  3. Stir in the nut paste and spices.

  4. Let it infuse well and strain.

  5. Serve chilled with a little cardamom.
