Tibetan soup with hand-pulled noodles

Thenthuk is a hearty Tibetan noodle soup in which flat pieces of dough are pulled by hand into the boiling broth.

The warming Himalayan dish is made with meat and vegetables in Nepal's Tibetan communities.

Ingredients

  • Wheat flour250 g
  • Beef300 g
  • Tomato & spinachsome of each
  • Onion & garlicsome of each
  • Ginger & spring onionsome of each
  • Salt & peppersome of each

Preparation

  1. Knead flour with water into a firm dough and rest.

  2. Fry the meat with onion, garlic and ginger.

  3. Top up with water and add tomato.

  4. Press the dough flat and pull pieces into the broth.

  5. Add spinach, season and serve with spring onion.
