Spiced Gujarati flatbread with fenugreek

Thepla are thin, spiced flatbreads from Gujarat, with fresh fenugreek leaves worked into the dough.

Long-keeping and ideal for travel, they are eaten with yoghurt, pickles or tea.

Ingredients

  • Wholewheat flour250 g
  • Fresh fenugreek leaves100 g
  • Yoghurt2 tbsp
  • Turmeric & chili powdersome of each
  • Ginger & garlicsome of each
  • Oil & saltsome of each

Preparation

  1. Mix flour, chopped fenugreek and spices.

  2. Knead with yoghurt and water into a supple dough.

  3. Roll out thin into round flatbreads.

  4. Cook on the hot griddle with a little oil on both sides.

  5. Serve with yoghurt or pickle.
