Thepla
Spiced Gujarati flatbread with fenugreek
Thepla are thin, spiced flatbreads from Gujarat, with fresh fenugreek leaves worked into the dough.
Long-keeping and ideal for travel, they are eaten with yoghurt, pickles or tea.

- Wholewheat flour250 g
- Fresh fenugreek leaves100 g
- Yoghurt2 tbsp
- Turmeric & chili powdersome of each
- Ginger & garlicsome of each
- Oil & saltsome of each

Preparation
Mix flour, chopped fenugreek and spices.
Knead with yoghurt and water into a supple dough.
Roll out thin into round flatbreads.
Cook on the hot griddle with a little oil on both sides.
Serve with yoghurt or pickle.
