Braised pork belly with eggs in coconut water
Thit kho trung is a Vietnamese braise of pork belly and hard-boiled eggs in coconut water.
Especially at the Tet new year, the tender, sweetish dish is made in many families.

Ingredients
- Pork belly700 g
- Hard-boiled eggs6
- Coconut water500 ml
- Fish sauce3 tbsp
- Sugar & caramelsome of each
- Garlic & shallotssome of each

Preparation
Cut the pork belly into pieces and marinate.
Melt sugar into caramel and sear the pork in it.
Pour in coconut water and fish sauce.
Add the eggs and braise gently for a long time.
Cook until the meat is tender and the sauce syrupy.
