Vegetarian coconut soup with mushrooms

Tom kha het is the vegetarian version of the famous Thai coconut soup, here with mushrooms instead of chicken.

Galangal, lemongrass and lime leaves give the creamy soup its fresh, tangy character.

Ingredients

  • Mixed mushrooms400 g
  • Coconut milk400 ml
  • Galangal & lemongrasssome of each
  • Lime leaves4
  • Lime & soy saucesome of each
  • Chili & coriandersome of each

Preparation

  1. Bring galangal, lemongrass and lime leaves to a boil in water.

  2. Add the coconut milk.

  3. Add the mushrooms and cook.

  4. Season with lime, soy sauce and chili.

  5. Serve sprinkled with coriander.
