Spicy-sour pork rib soup from Isan

Tom Saap is a clear, fiery-sour soup from northeastern Thailand (Isan), made with pork ribs.

Unlike the creamy Tom Kha, it uses no coconut milk - its heat and sourness come from chili, lime and plenty of herbs.

Ingredients

  • Pork ribs500 g
  • Lemongrass2 stalks
  • Galangal4 slices
  • Kaffir lime leaves4 pieces
  • Lime juice3 tbsp
  • Fish sauce2 tbsp
  • Dried chili & roasted riceto taste

Preparation

  1. Simmer the ribs tender with water, lemongrass and galangal.

  2. Add lime leaves and dried chili.

  3. Season hot and sour with fish sauce and lime juice.

  4. Stir in roasted rice powder.

  5. Serve scattered with fresh herbs.
