Tongseng

Javanese goat stew with cabbage

Tongseng is a spiced Javanese stew of goat or lamb in a broth with cabbage and tomatoes.

A paste of shallots and spices plus a splash of sweet soy sauce give it its full-bodied character.

Ingredients

  • Goat or lamb meat600 g
  • Cabbage200 g
  • Shallots & garlicsome of each
  • Sweet soy sauce (kecap manis)3 tbsp
  • Tomatoes & chilisome of each
  • Coconut milk200 ml

Preparation

  1. Fry a spice paste of shallots and garlic.

  2. Add the meat and simmer soft with water.

  3. Stir in sweet soy sauce and coconut milk.

  4. Add cabbage, tomatoes and chili.

  5. Cook briefly and serve hot.
