Tonjiru

Hearty pork miso soup

Tonjiru (also butajiru) is a rich miso soup with pork and plenty of root vegetables - a warming winter dish of Japan.

Unlike clear miso soup, it is a filling meal with radish, carrot, taro and leek.

Ingredients

  • Pork belly (thin)200 g
  • Radish & carrot300 g
  • Taro or potato200 g
  • Miso3 tbsp
  • Dashi1 l
  • Leek1 stalk

Preparation

  1. Briefly sear the pork.

  2. Add the vegetables and fry along.

  3. Pour in dashi and simmer tender.

  4. Reduce heat, stir in the miso.

  5. Serve scattered with leek.
