Tonkotsu Ramen

Creamy pork bone broth from Kyushu

Tonkotsu ramen comes from Fukuoka on Kyushu, where pork bones are boiled at a rolling boil for hours until the broth turns milky white and creamy.

It is served with thin noodles, chashu pork belly, marinated eggs and spring onions.

Ingredients

  • Pork bones1.5 kg
  • Pork belly (chashu)400 g
  • Ramen noodles400 g
  • Marinated eggs4
  • Garlic & gingersome of each
  • Spring onions3

Preparation

  1. Blanch the pork bones and rinse them.

  2. Boil hard with fresh water.

  3. Simmer for several hours until the broth turns white.

  4. Braise the chashu separately and slice it.

  5. Cook the noodles and assemble with broth and toppings.
