Chicken in tempura batter from Oita

Tori ten is a specialty of Oita prefecture of marinated chicken fried in airy tempura batter.

Unlike karaage, the meat is seasoned first and coated in a light egg batter.

Ingredients

  • Chicken breast or thigh500 g
  • Tempura flour120 g
  • Egg1
  • Soy sauce & sake1 tbsp each
  • Garlic & gingersome of each
  • Oil for fryingenough

Preparation

  1. Marinate the chicken with soy sauce, sake, garlic and ginger.

  2. Stir a tempura batter of flour, egg and cold water.

  3. Dip the chicken into the batter.

  4. Fry golden in hot oil.

  5. Serve with ponzu or mustard soy sauce.
