Japanese chicken meatballs off the yakitori grill
Tsukune are seasoned chicken meatballs that belong to the staple repertoire of Japanese yakitori stalls.
Glazed with a sweet tare sauce, they are grilled on skewers and often served with raw egg yolk.

- Minced chicken400 g
- Soy sauce & mirin2 tbsp each
- Spring onion2
- Ginger1 piece
- Cornstarch1 tbsp
- Egg yolk for dippingto taste

Preparation
Mix minced chicken with ginger, spring onion and cornstarch.
Shape into oblong meatballs and skewer.
Reduce a tare of soy sauce and mirin.
Grill the skewers and glaze repeatedly.
Serve with raw egg yolk for dipping.
