Japanese chicken meatballs off the yakitori grill

Tsukune are seasoned chicken meatballs that belong to the staple repertoire of Japanese yakitori stalls.

Glazed with a sweet tare sauce, they are grilled on skewers and often served with raw egg yolk.

Ingredients

  • Minced chicken400 g
  • Soy sauce & mirin2 tbsp each
  • Spring onion2
  • Ginger1 piece
  • Cornstarch1 tbsp
  • Egg yolk for dippingto taste

Preparation

  1. Mix minced chicken with ginger, spring onion and cornstarch.

  2. Shape into oblong meatballs and skewer.

  3. Reduce a tare of soy sauce and mirin.

  4. Grill the skewers and glaze repeatedly.

  5. Serve with raw egg yolk for dipping.
