Tudou Si
Crunchy shredded potato from the wok
Tudou si are finely shredded potato strips that are stir-fried quickly and hot in the wok.
Rinsing and fast frying keep them crunchy rather than starchy, a classic of Chinese home cooking.

- Potatoes400 g
- Dried chilies4
- Rice vinegar1 tbsp
- Sichuan pepper1 tsp
- Garlic & spring onionsome of each
- Oil & saltsome of each

Preparation
Cut the potatoes into fine strips and rinse.
Drain well and pat dry.
Fry chili and Sichuan pepper in oil.
Stir-fry the potato strips quickly.
Deglaze with vinegar and salt and serve at once.
