Tudou Si

Crunchy shredded potato from the wok

Tudou si are finely shredded potato strips that are stir-fried quickly and hot in the wok.

Rinsing and fast frying keep them crunchy rather than starchy, a classic of Chinese home cooking.

Ingredients

  • Potatoes400 g
  • Dried chilies4
  • Rice vinegar1 tbsp
  • Sichuan pepper1 tsp
  • Garlic & spring onionsome of each
  • Oil & saltsome of each

Preparation

  1. Cut the potatoes into fine strips and rinse.

  2. Drain well and pat dry.

  3. Fry chili and Sichuan pepper in oil.

  4. Stir-fry the potato strips quickly.

  5. Deglaze with vinegar and salt and serve at once.
