Filipino fried banana rolls

Turon is a beloved Filipino street snack: plantains rolled in spring roll wrappers and fried until crisp.

As it fries, brown sugar caramelizes into a glossy, crisp crust; a slice of jackfruit is often tucked into the roll.

  • Ripe plantains (saba)3 pieces
  • Spring roll wrappers6 sheets
  • Brown sugar60 g
  • Jackfruit (optional)a few strips
  • Oil for fryingplenty

Preparation

  1. Halve plantains lengthwise and roll in brown sugar.

  2. Place on the wrappers, top with jackfruit.

  3. Roll tightly, seal the edges.

  4. Fry golden and crisp in hot oil.

  5. Drain with a little sugar and serve warm.
