Ube Halaya
Creamy Filipino purple yam jam
Ube halaya is a vivid purple Filipino sweet made from the purple yam ube.
Cooked down long with coconut and condensed milk, it is served at celebrations and as a topping for halo-halo.

- Ube (purple yam)500 g
- Coconut milk250 ml
- Sweetened condensed milk200 ml
- Butter50 g
- Sugar60 g
- Pinch of salt1 pinch

Preparation
Cook, peel and finely mash the ube.
Put into a pan with coconut and condensed milk.
Stir in butter and sugar.
Stir long over low heat until it thickens.
Fill into a dish and serve chilled.
