Ube Halaya

Creamy Filipino purple yam jam

Ube halaya is a vivid purple Filipino sweet made from the purple yam ube.

Cooked down long with coconut and condensed milk, it is served at celebrations and as a topping for halo-halo.

Ingredients

  • Ube (purple yam)500 g
  • Coconut milk250 ml
  • Sweetened condensed milk200 ml
  • Butter50 g
  • Sugar60 g
  • Pinch of salt1 pinch

Preparation

  1. Cook, peel and finely mash the ube.

  2. Put into a pan with coconut and condensed milk.

  3. Stir in butter and sugar.

  4. Stir long over low heat until it thickens.

  5. Fill into a dish and serve chilled.
