Gujarat's winter vegetable casserole
Undhiyu is a festive vegetable dish from Gujarat, traditionally cooked at the winter harvest and the Uttarayan festival.
A variety of winter vegetables and fenugreek dumplings are slow-braised with a coconut-coriander paste.

- Mixed winter vegetables600 g
- Fenugreek & chickpea floursome of each
- Grated coconut100 g
- Coriander & green chilisome of each
- Ginger & garlicsome of each
- Oil & spicessome of each

Preparation
Mix coconut, coriander, chili and spices into a paste.
Form fenugreek-chickpea dumplings and fry them.
Fill or toss the vegetables with the paste.
Slow-braise everything covered with a little water.
Serve with puri or rice.
