Gujarat's winter vegetable casserole

Undhiyu is a festive vegetable dish from Gujarat, traditionally cooked at the winter harvest and the Uttarayan festival.

A variety of winter vegetables and fenugreek dumplings are slow-braised with a coconut-coriander paste.

Ingredients

  • Mixed winter vegetables600 g
  • Fenugreek & chickpea floursome of each
  • Grated coconut100 g
  • Coriander & green chilisome of each
  • Ginger & garlicsome of each
  • Oil & spicessome of each

Preparation

  1. Mix coconut, coriander, chili and spices into a paste.

  2. Form fenugreek-chickpea dumplings and fry them.

  3. Fill or toss the vegetables with the paste.

  4. Slow-braise everything covered with a little water.

  5. Serve with puri or rice.
