Uyghur Polo

Xinjiang pilaf with lamb and carrot

Polo is the pilaf of the Uyghurs in Xinjiang, a festive dish of rice cooked with lamb and yellow carrot in its own stock.

The lamb fat and sweetish carrot lend the rice colour and flavour; raisins are often added.

Ingredients

  • Rice400 g
  • Lamb500 g
  • Yellow carrots400 g
  • Onion2 pieces
  • Cumin & saltsome of each
  • Raisins1 handful

Preparation

  1. Sear the lamb hard in oil.

  2. Add onion and carrot and fry along.

  3. Pour in water, cumin and salt.

  4. Layer soaked rice on top without stirring.

  5. Cook covered until the rice is fluffy, mix and serve.
