Vegetables in a mild cashew-coconut sauce

Veg korma is a mild South Indian vegetable curry in a creamy sauce of cashews and coconut.

A gentle spice paste instead of chili heat makes the colourful vegetables a festive dish.

Ingredients

  • Mixed vegetables500 g
  • Cashew nuts60 g
  • Grated coconut60 g
  • Onion & ginger-garlicsome of each
  • Garam masala & green chilisome of each
  • Yogurt or cream100 ml

Preparation

  1. Grind cashews and coconut into a fine paste.

  2. Fry onion with ginger-garlic.

  3. Add the vegetables and sweat.

  4. Stir in the cashew-coconut paste and a little water.

  5. Enrich with yogurt and season mildly.
