Vegetables in a mild cashew-coconut sauce
Veg korma is a mild South Indian vegetable curry in a creamy sauce of cashews and coconut.
A gentle spice paste instead of chili heat makes the colourful vegetables a festive dish.

- Mixed vegetables500 g
- Cashew nuts60 g
- Grated coconut60 g
- Onion & ginger-garlicsome of each
- Garam masala & green chilisome of each
- Yogurt or cream100 ml

Preparation
Grind cashews and coconut into a fine paste.
Fry onion with ginger-garlic.
Add the vegetables and sweat.
Stir in the cashew-coconut paste and a little water.
Enrich with yogurt and season mildly.
