Wambatu Moju

Sri Lankan sweet-sour eggplant pickle

Wambatu moju is a Sri Lankan eggplant pickle that unites sweet, sour and spicy notes in one dish.

Fried eggplant strips are pickled with vinegar, sugar, mustard and spices and served as a side to rice and curry.

Ingredients

  • Eggplants500 g
  • Vinegar4 tbsp
  • Sugar2 tbsp
  • Mustard seeds & chili powdersome of each
  • Red onion & garlicsome of each
  • Turmeric & saltsome of each

Preparation

  1. Cut the eggplants into strips and fry with turmeric.

  2. Briefly fry onion, garlic and mustard.

  3. Mix vinegar, sugar and chili powder into a sauce.

  4. Toss the eggplant in the sauce.

  5. Let it steep briefly and serve cooled as a side.
