Wonton Soup

Delicate dumplings in clear broth

Wonton roughly means “swallowed cloud” – an image for the delicate dumplings floating in clear broth. They come from northern China and were refined into fine soup artistry in Canton.

The filling of minced pork and prawns, the silky wrapper and an aromatic broth make a light, warming dish – comfort in a bowl.

Ingredients

  • Wonton wrappers30
  • Minced pork250 g
  • Prawns, chopped150 g
  • Ginger & spring onionsome of each
  • Soy sauce & sesame oil1 tbsp each
  • Chicken broth1.2 L
  • Pak choi1 handful

Preparation

  1. Mix pork, prawns, ginger, soy sauce and sesame oil into a filling.

  2. Place 1 tsp on each wrapper, moisten the edges and seal into pouches.

  3. Bring the broth to a boil with ginger, season.

  4. Cook the wontons in the broth (or separately) for 4–5 min until they rise.

  5. Serve with pak choi and spring onion in the hot broth.
