Hunan stir-fried pork with green chili
Xiaochao rou is a famous home-style dish from Hunan with pork belly and plenty of green chili.
Fermented black beans and garlic give the quick wok dish its savoury depth.

- Sliced pork belly300 g
- Green chilies200 g
- Fermented black beans1 tbsp
- Garlic & gingersome of each
- Soy sauce1 tbsp
- Oil2 tbsp

Preparation
Render the pork belly in the wok until lightly crisp.
Add garlic, ginger and black beans.
Stir in the green chilies.
Season with soy sauce.
Toss briefly and serve at once.
