Crispy Korean vegetable pancake

Yachae jeon is a savoury Korean pancake made with a colourful mixture of vegetables.

Crisp outside and tender inside, it is served with a dip of soy sauce and vinegar.

Ingredients

  • Flour150 g
  • Carrot, zucchini & spring onion300 g
  • Egg1
  • Ice water180 ml
  • Soy sauce & vinegarfor dipping
  • Oil3 tbsp

Preparation

  1. Cut the vegetables into fine strips.

  2. Stir flour, egg and ice water into a batter.

  3. Fold in the vegetables.

  4. Fry crisp on both sides in hot oil.

  5. Cut into pieces and serve with the dip.
