Crispy Korean vegetable pancake
Yachae jeon is a savoury Korean pancake made with a colourful mixture of vegetables.
Crisp outside and tender inside, it is served with a dip of soy sauce and vinegar.

Ingredients
- Flour150 g
- Carrot, zucchini & spring onion300 g
- Egg1
- Ice water180 ml
- Soy sauce & vinegarfor dipping
- Oil3 tbsp

Preparation
Cut the vegetables into fine strips.
Stir flour, egg and ice water into a batter.
Fold in the vegetables.
Fry crisp on both sides in hot oil.
Cut into pieces and serve with the dip.
