Yakitori

Glazed chicken skewers from the charcoal grill

Yakitori – “grilled chicken” – is the soul of Japanese izakaya culture. On small skewers, every part of the chicken is grilled over binchotan charcoal, from breast to skin.

The tare glaze of soy sauce, mirin and sake is reused over the years and gains depth. Sweet-salty sheen on smoky meat.

Ingredients

  • Chicken thighs500 g
  • Soy sauce4 tbsp
  • Mirin3 tbsp
  • Sake2 tbsp
  • Sugar1 tbsp
  • Spring onions2
  • Wooden skewers8

Preparation

  1. Reduce soy sauce, mirin, sake and sugar into a glaze until lightly syrupy.

  2. Cut chicken and spring onion into bite-size pieces, thread alternately.

  3. Grill over charcoal or in a grill pan all over.

  4. Brush repeatedly with tare and grill briefly until glossy.

  5. Serve hot, optionally with shichimi pepper.
