Yan du xian is a clear Shanghai soup whose name stands for cured, cooked and fresh meat.

Salty ham and fresh pork belly simmer with bamboo shoot and tofu knots into a milky, delicate broth.

Ingredients

  • Fresh pork belly400 g
  • Cured ham150 g
  • Fresh bamboo shoot200 g
  • Tofu knots100 g
  • Ginger & spring onionsome of each
  • Shaoxing wine2 tbsp

Preparation

  1. Blanch the pork and ham.

  2. Start with water, ginger and wine.

  3. Simmer gently for about an hour.

  4. Add bamboo shoot and tofu knots.

  5. Keep cooking until the broth is full-bodied.
