Yangrou Chuan

Xinjiang cumin lamb skewers

Yangrou chuan are grilled lamb skewers from Xinjiang, now found at night markets across China.

Seasoned with plenty of cumin and chili and grilled over charcoal, they are the essence of Chinese street-food grilling.

Ingredients

  • Lamb shoulder (cubed)600 g
  • Cumin (whole & ground)2 tbsp
  • Chili flakes1 tbsp
  • Garlic3 cloves
  • Oil & saltsome of each
  • Lamb fat (optional)a few cubes

Preparation

  1. Marinate the lamb with garlic, oil and a little cumin.

  2. Thread onto skewers, alternating with fat cubes if used.

  3. Grill over charcoal.

  4. Scatter with cumin and chili while grilling.

  5. Serve hot.
