Pink noodle soup with seafood

Yen ta fo is a Thai noodle soup that gets its striking pink colour from fermented red tofu.

It combines fish balls, squid and crispy tofu in a sweet and sour broth and traces back to Chinese influences.

Ingredients

  • Wide rice noodles200 g
  • Fish balls & squid250 g
  • Fermented red tofu sauce (yen ta fo)3 tbsp
  • Morning glory (water spinach)1 bunch
  • Rice vinegar & sugar1 tbsp each
  • Crispy wontons4

Preparation

  1. Heat the broth and colour it with the red tofu sauce.

  2. Season sweet and sour with rice vinegar and sugar.

  3. Blanch the noodles and water spinach.

  4. Cook fish balls and squid in the broth.

  5. Assemble in bowls and top with wontons.
