You Po Mian

Oil-splashed noodles from Shaanxi

You po mian are hand-pulled noodles from Shaanxi province, finished with sizzling hot oil poured on top.

The oil hits chili flakes, garlic and spring onion and releases the spices' full aroma with a hiss.

Ingredients

  • Wide wheat noodles300 g
  • Chili flakes2 tbsp
  • Garlic3 cloves
  • Spring onion2 stalks
  • Soy sauce & black vinegar1 tbsp each
  • Vegetable oil5 tbsp

Preparation

  1. Cook the noodles in boiling water and drain.

  2. Pile chili, garlic and spring onion on top.

  3. Heat the oil until very hot.

  4. Pour the hot oil over the spices.

  5. Mix with soy sauce and vinegar, serve.
