Youtiao

Chinese fried dough sticks

Youtiao are long, airily fried dough sticks eaten for breakfast all over China - classically dunked into warm soy milk or rice porridge.

Two strands of dough are pressed together and fried in hot oil, where they puff up dramatically and turn golden and crisp.

Ingredients

  • Flour300 g
  • Baking powder & soda1 tsp each
  • Salt1 tsp
  • Water180 ml
  • Vegetable oil (for frying)plenty

Preparation

  1. Knead flour, baking powder, soda and salt with water into a soft dough.

  2. Rest covered for several hours.

  3. Cut the dough into strips, stack two and press lengthwise.

  4. Fry golden in hot oil, turning.

  5. Drain, serve warm with soy milk or congee.
