Korean beef tartare

Yukhoe is finely cut raw beef seasoned with sesame oil, soy sauce and garlic - a Korean delicacy.

Classically arranged with fine pear strips and a raw egg yolk; the pear's sweetness contrasts the savoury meat.

Ingredients

  • Beef tenderloin (very fresh)250 g
  • Asian pear1/2 piece
  • Sesame oil1 tbsp
  • Soy sauce1 tbsp
  • Garlic & sugarsome of each
  • Egg yolk1 piece

Preparation

  1. Cut the beef into fine strips, keep cold.

  2. Cut the pear into fine strips.

  3. Mix the meat with sesame oil, soy, garlic and sugar.

  4. Arrange on the pear.

  5. Top with egg yolk and sesame.
