Crispy catfish with green mango salad

Yum pla duk foo is a Thai classic: shredded catfish is fried until it becomes an airy, crispy cloud.

It is paired with a spicy-sour salad of green mango, chili and peanuts - crunchy, fruity and fiery all at once.

Ingredients

  • Catfish fillet300 g
  • Green mango1 piece
  • Shallots2 pieces
  • Lime juice & fish sauce2 tbsp each
  • Peanuts2 tbsp
  • Fresh chili2 pieces

Preparation

  1. Cook the catfish, shred finely and dry.

  2. Fry in hot oil into a crispy cloud.

  3. Cut the green mango into fine strips.

  4. Mix with lime juice, fish sauce, shallots and chili.

  5. Plate crispy catfish and salad together, scatter with peanuts.
