Rice noodle roll around crispy youtiao

Zhaliang is a Cantonese dim sum dish in which a crispy fried dough stick (youtiao) is wrapped in a soft rice noodle roll.

The contrast of smooth rice skin and crunchy core is served with sweet soy sauce and sesame paste.

Ingredients

  • Rice flour150 g
  • Wheat starch30 g
  • Youtiao (fried dough stick)2 pieces
  • Sweet soy sauce3 tbsp
  • Sesame paste1 tbsp
  • Sesame & spring onionsome of each

Preparation

  1. Whisk rice flour and starch with water into a thin batter.

  2. Pour a thin layer into a tray and steam.

  3. Lay the youtiao on the finished rice noodle sheet.

  4. Roll up tightly and cut into pieces.

  5. Douse with sweet soy sauce and sesame paste.
