Glutinous rice parcels in bamboo leaves

Zongzi are pyramid-shaped glutinous rice parcels wrapped in bamboo leaves and steamed - traditionally eaten at the Dragon Boat Festival.

The savoury version is filled with marinated pork belly, salted egg and shiitake; the leaves lend the rice its signature aroma.

Ingredients

  • Glutinous rice (soaked)500 g
  • Pork belly (marinated)300 g
  • Salted egg yolks4 pieces
  • Dried shiitake8 pieces
  • Bamboo leaves16 pieces
  • Soy sauce2 tbsp

Preparation

  1. Soak and clean the bamboo leaves.

  2. Season the glutinous rice with soy sauce.

  3. Fold leaves into a cone, add rice and filling.

  4. Wrap tightly into pyramids and tie with twine.

  5. Steam or boil long, serve hot.
