Japanese rice stew in dashi

Zosui is a Japanese rice stew in which cooked rice is simmered in seasoned dashi broth.

Often made from the leftovers of a nabe hot pot, it is enriched with egg and spring onion.

Ingredients

  • Cooked rice300 g
  • Dashi broth700 ml
  • Eggs2
  • Soy sauce & mirinsome of each
  • Mushrooms & spring onionsome of each
  • Norisome

Preparation

  1. Season the dashi with soy sauce and mirin.

  2. Add rice and mushrooms.

  3. Simmer gently until the rice is soft.

  4. Stir in beaten egg.

  5. Serve with spring onion and nori.
